Central Asian Food Series: Okroshka


(Oops, I thought I posted this a month ago lol 🤦🏻‍♀️🤷🏻‍♀️)

Okroshka, is a Russian cold summer soup. Of course it got carried over as a popular dish in central asian dishes during the Soviet time. The funny thing is I know I have had this before but don’t distinctly remember when, probably in the summer 🤪 It is mostly raw vegetables, (most likely radishes) boiled potatoes, eggs and cooked meat. The meat could be veal, mixed sausage, beef or even ham with kvass (a drink made from fermented black or rye bread). Oh, and of course, flavored with lots of dill!!! (Dill is a big deal in Russian dishes- which Andrew and I have really enjoyed adding this herb to a lot of our dishes as well). It could have sour cream as well, or even kefir although I don’t think that is as popular as just sour cream.
